I typed this up a few weeks ago and posted it on our kitchen board for those nights when Matt volunteers to do dinner, which will be becoming frequent. :) Since it was already typed up, I thought I might as well share it, because even — especially? — mommies need some quick and easy dinners. What are yours?
## Easy Dinners
Southwestern Chicken Soup – serve with bread or tortilla chips and carrot sticks
Stovetop: In a bit of oil, saute cut-up raw chicken with some diced onion, garlic, and peppers. Add diced zucchini if you feel like it. Cook until chicken is cooked through and brown bits start collecting on the pan. Dump in 2 cups of water and 2 teaspoons chicken bouillon and whisk the bottom of the pan to get up those bits. Then add a can of corn and a can of black beans, both drained, and a can of diced tomatoes. Add 1 tablespoon taco seasoning to taste and simmer for 10-15 minutes.
Sausage Noodles – serve with a green vegetable
Start water to boil. In a saucepan brown a package of sausage until cooked through. Saute some diced zucchini with the sausage if you feel like it. Cook penne noodles in boiling water.. Add a can of diced tomatoes with the juice to the sausage and whisk up brown bits from the pan. Add a can of drained, chopped olives. Heat through. Drain noodles and toss with the sausage mixture.
Easy Beef Stroganoff – serve with a green vegetable
In saucepan, combine pre-browned ground beef, 1 can cream of mushroom soup, 1 cup sour cream, 1 cup water, 1 teaspoon beef bouillon, 1 teaspoon Worcestershire sauce, and 2 ½ – 3 cups penne noodles. Heat gently to a simmer, then lower heat to about 3, cover, and let simmer 8-10 minutes. Uncover and stir, allowing it to simmer more if it’s too soupy or if the noodles aren’t quite done.

Black bean chili from freezer with baked potatoes and broccoli
to bake potatoes: scrub, prick with fork, rub with margarine, put on pan and cover with foil, bake at 400-degrees for about an hour
## Extra-Quick Options:
Fish sticks with frozen fries and a green vegetable
Clam chowder (2 cans), soda crackers, and a green vegetable
Macatap: 2 macaroni boxes with peas boiled with the noodles; after draining the noodles add 4 tablespoons margarine, 1 can drained tuna, cheese packet, and extra grated cheese.
