Quick and Easy Dinners #1

I hope to post a few of these. Several weeks ago at play group we were discussing that we should share our staple easy dinners with one another. Most everyone has brought a recipe along with lunch when it was their turn. Last time it was my turn, I typed it out, printed it out, even took it along with me, and still forgot all about it. At least half of those ladies read my blog, and the other half can come get it if they want it. Here, even more friends than those four can share this.

Easy Oven Omelet

8 eggs
1/2 cup half & half or whole milk
1 cup shredded cheddar cheese
1 cup chopped fully cooked ham or browned ground sausage or cooked and crumbled bacon
1/2 – 1 cup chopped veggies, made of any combination of the following: green or red pepper, onion, green onion, zucchini, mushrooms

Beat eggs and milk together until light and fluffy. Stir in the cheese, meat, and veggies. Pour into a greased 9″x9″ pan. At this point, you may cover and refrigerate up to 24 hours then bake as usual. Bake at 400-degrees for 25 minutes, uncovered.
