Two Weeks of Soup
I have to have a soft diet for two weeks, so I have a dinner menu consisting solely of soup:
- Turkey Broth
- Red Pepper & Carrot Soup
- Beef Broth
- Harvest Soup
- Split Pea Soup
- White Bean Chicken Soup
- Cream of Potato Soup
- Turkey Vegetable Rice Soup
- Taco Soup
- Cream of Broccoli Soup
- Beef Vegetable Soup
With one or two repeats and a couple days of leftovers, that should do it. Soup dinners sure are economic, though! My grocery bill was quite a bit less than average. Of course, the turkey and beef soup bones I already had in the freezer.
I will eat the leftover soup for lunch, and I also bought some vegetable juice to heat up as tomato soup for some lunches. I bought lunch meat and cheese and pickles and will make bread (I have bagels for backups) so Matt can have hearty lunches (he’s been taking chili most days). My goal is to perhaps lose a couple pounds while making sure my three boys do not. :)
