Lunchtime Solutions

Matt needs quick lunches to take to work for those days when there are not leftovers. We have done canned chili and frozen burritos before, but it was time for something different. Matt likes sandwiches, but the problem is that the lunchmeat never gets used up before it goes bad or I forget to check the bread status the night before and so only have frozen bread in the morning. I have found the solution: Stromboli.

My recipe is simple and not genuine Italian stromboli. I simply make a pizza dough, roll it out, top it with sandwich fixings, roll it up, bake it, slice it, wrap it in foil, and freeze it.

When Matt needs a lunch he simply grabs one or two from the freezer, puts it in the fridge at work, then microwaves them for about a minute and enjoys a warm sandwich or two.
